Liberty

Liberty is something with which Americans are born. Liberty, as defined in the big, thick Webster's, is the condition of being free to choose. Those famous words ring in our ears, "Give me liberty, or give me". 

When it comes to "liberty" and Asian Fusion, there is no choice, because there's only one place in Texas, I know of, that combines flavors from Thailand, China, Korea, Vietnam, Laos, Malaysia and India: Liberty, a hit of mega proportions on Lowest Greenville in Dallas, now relocated to the Park Cities. 

Dallas restaurateur Jeffrey Yarborough, owner of Deep Ellum's Blind Lemon, keeps the vision fresh in the spacious new digs and wisely remains associated himself with the Grand Dame of Dallas Asian cooking, Chef Annie Wong. Chef Annie introduced Thai food to the Metroplex. She knows her way around an Asian noodle like nobody's business. 

The food is still the star in the new location.

Fried dumplings with chicken, potato and curry are delicious. Vietnamese Fresh Spring Rolls are light and flavorful and are perfectly accented with a peanut and plum sauce. Chicken skewers and grilled calamari are other good starters. The Chinese and Laotian salads offer lots of crunch and zest. 

You'll find a wide range of soups served in a big bowl, from spicy duck to coconut chicken. The wait staff highly recommends Annie's Special, with egg noodles and curry, coconut milk, fried noodles, shallots, lime and red onion. Have it with chicken or tofu. 

A mixed grill sampling of Liberty's beef, chicken and pork is a great introduction to Liberty's great flavors. Cilantro, garlic and lemongrass mingle with the meat. It's served with sticky rice, steamed vegetables and a tasty hot and spicy sauce for dipping.

The noodle dishes are a big highlight of Liberty. Pad Thai, India Shrimp, and Korean Beef Noodles will make it hard for you to decide. You can find a nice, spicy tomato linguine noodle dish. Keep it simple, or dress it up with a seafood medley.

Main course Rice Dishes include a tasty Seared marinated Salmon, done in a wok with fried curried rice and vegetables. Grilled beef and barbecued pork sound like sure tries on our next visit. Vegetarians take note, Liberty will substitute tofu for meat in most dishes.

Liberty reminds you to save room for dessert. They even encourage you to take some home to someone you love. Good advice when it comes to Annie's Super Sticky Rice Platter with Asian Custard.

The wine list is interesting and varied.
