Guthries American Restaurant
Weve referred to him as an urban pioneer. Weve raved about his fish n chips.
Weve sent countless people to his simple downtown restaurant for breakfast and lunch. Alas, weve lamented because
dinner was only served one night per week.
Thank goodness, thats changed now that Guthries American Restaurant is open a few
more evenings. Theres good news and theres great news here. First the good news, dinner is now served Wednesday
through Saturday at Guthries-downtown at the corner of Ervay and Wood. Now, the great news! William Guthrie
does his becoming famous, as he calls it, all you can eat fish fry every night and the entrée menu has
expanded to show off more of Williams extraordinary culinary skills.
Featured are items fans might recall from his days as Chef of Quadrangle Grille and
Hotel St. Germain.
A beautiful salmon cake with lemon Hollandaise sauce. Perfectly crispy on the outside;
tender, juicy, all salmon on the inside. Other appetizers you need to try include Guthries breaded spinach ricotta
ravioli and shrimp in garlic butter crust.
Light soup and salads are offered. Theres always a seafood-chicken gumbo and a soup
of the day, by the cup or the bowl.
Theres a list of satisfying American favorites on the entrée side of the menu
that will keep me coming back to Guthries for their new dinner service on a regular basis.
I had the most delectable salmon and shrimp, baked in paper that I can recall. The
baker paper keeps all the moistness and flavor locked inside. The julienne vegetables inside add just the right
texture compliment to the succulent seafood. We also tried a tender and delicious pan seared chicken breast; rubbed
in a mixture of dried chiles and other spices and sauteed with mushrooms. Guthries serves some wonderful pastas,
like his elegant spinach ricotta ravioli in walnut cream. Youll also find a pan fried New York strip, and a pork
schnitzel with egg gravy and a baked stuffed salmon with Champagne cream sauce that well be trying on our next
visit.
With limited operating hours in 1998, we named Guthries to our list of the best new
restaurants of the year. That choice is re-enforced with expanded hours and the introduction of new menu items.
More good news for regulars-Guthries has its on-premise license now and William is
putting together his beer and wine list. You might want to suggest a favorite brew or wine for him to consider.
He aims to please. Something else that pleases about Guthries is the moderate pricing on the new dinner menu.
Entrees range from $9 to $19 and are served with a fresh vegetable and baked potato.
Service is not the hallmark of Guthries. Although there is a waiter at night, instead
of the self-service lunch arrangement. But I am content to go with the flow, enjoy the relaxing downtown space,
and savor the outstanding food of Chef William Guthrie. As we say with historical American restaurants, with
vittles this good, I dont care if the service is pretty as long as the waiter gets it to us hot-and thats something
upon which William insists.
Guthries American Restaurant is located downtown, across the street from the main
public library, at 400 South Ervay Street. Breakfast and lunch are served Monday through Friday. The new dinner
hours are Wednesday through Saturday, 6 till 10:30. Reservations are accepted at 214-760-7900.
On The KRLD Restaurant Show Review Scale of One to Five Forks:
Guthries rates 3 and a half Forks.
Food is 4 Forks
Service is 2 and a half Forks
Atmosphere is 3 Forks
And I bumped it up a half fork because of the moderate prices and because Guthries in an American original in
the heart of Downtown Dallas-and we can use more of that.
