Café on the Green

Switch paradigms and make a reservation for your next important business lunch at an exclusive resort.

You say you loaned your private jet to a pal who’s closing a big deal in Bahrain?

No problem, one of the most congenial and delicious dining destinations anywhere is The Four Seasons Resort and Club Café on the Green.

The green, in case you don’t know, is the Tournament Players Course at Las Colinas. Mr. Byron Nelson was nearby practicing his ceremonial tee shot for Augusta.

The café is under the skillful direction of Executive Chef Bernhard Muller and Chef de Cuisine Dan Coudreaut.

To say the food and setting are sublime is an understatement. There’s a casual elegance here. The service is friendly and very attentive.

Bring your biggest client and be confident he or she will be impressed.

Grilled quesadilla ($9) with portabello and Ricotta cheese, and seared Asian pot stickers ($9) are two of the tempting appetizers my lunch companions chose. I had a fabulous chicken saté with intriguing banana chutney ($7).

It’s one of several delicious examples of Four Seasons alternative cuisine-lower in calories and fat.

When dishes like these are available, I always choose ‘em so I can continue to preach, “low fat does not have to mean low taste”-when done correctly.

It is done exceptionally here. The peppered chicken medallions over rice pilaf and a gazpacho broth swirling with vegetable flavors ($11) is another mouth-watering alternative dish.

There’s comfort food, too, down-home dishes like meatloaf with mashed potatoes and chicken potpie.

Pasta, fish and sandwiches are also available, but before I run out of space, I have to tell you about the buffet-unlike another other you’ve likely seen.

It features deli sandwiches, soups, seafood, a carving station, an array of salads, vegetables, condiments and wondrous desserts from Executive Pastry Chef Randy Gehman.

Partake of as much as you’d like for $21.50 or have soup, salad and desserts for $15.50.

Spend time in world class resort and be back in the office for a 2 o’clock conference call. Whatta deal.
