Great Caesar! It’s tasty!
By Jim White

James NeelThe Seventh Annual “Great Caesar Salad Competition” was a rousing good time! The Dallas-Fort Worth Chapter of The American Institute of Wine and Food presents the event as a fundraiser for their educational programs and scholarships. Judging by the happy crowd noshing away at The Fairmont Hotel’s International Ballroom, the event was AIWF’s most successful in the series. And the winner is-TAH-DAH!! James Neel, Executive Chef of the hot, new Biernat’s in Dallas. Click here to get a copy of the winning Caesar Salad Recipe. It’s a traditional recipe, and apparently, very popular with the crowd on-hand.

Jim Severson & Ann PipesWe’d also like to introduce you to the other great chefs who participated. They’re shown right here, beginning with last year’s winner, Jim Severson from Sevy’s Restaurant. Jim is shown along with AIWF member Ann Pipes of Dallas.

Nick Barclay Always a staunch competitor, Nick Barclay from Barclays used his “secret ingredient” Stilton Cheese in his recipe

Scott MonellA liberal serving of fresh ground pepper spiced up Scott Monell’s “tropical” Caesar. Scott is the
Executive. Chef of The Fairmont Hotel and lavish Pyramid Room

Grady SpearsThe boys from Fort Worth were strong favorites. Reata’s Grady Spears is whipping up another fresh batch of Caesar. Their side-dish, a grilled chicken tamale created the longest line at the event (bribery is encouraged).

Chris HuffClassy Palomino Restaurant rode in on a blaze of glory. Chef Chris Huff whipped up a special Pacific Northwest version of the Caesar, on a crackerlike ring-very vertical.

Clark McDanielAnother of Fort Worth’s finest was turning out a great creation. Executive Chef Clark McDaniel from Angeluna is hard at work in the early stages of the event.

Christian SvalesonTasty crab cakes accompanied the Caesar from Executive Chef Christian Svaleson from Fish: An upscale Seafood Restaurant.

They all deserve to brag. We can’t wait until next year’s Great Caesar Salad Competition!
