KEEPING YOUR COOL

During midsummer's heat, it can be tempting to
close the shades, adjust the air conditioning, and post a sign on
the front door that says "Call Me When It's Over". Indeed, having
spent my early years in New England and the Midwest, where periods
of heat and humity were offset by pleasant days and cool evenings,
it's still hard for me to get used to months of uninterrupted heat.
While I may not see many neighbors outdoors during the heat of the
day, summer is still a wonderful time to host small gatherings at
home with friends. In keeping with summer's relaxed atmosphere, a
last-minute invitation for cocktails is always appreciated.
Serving a signature cocktail creates an extra element of fun for any
gathering, and my recipe for Frozen Mojitos is perfect on hot summer
nights. Mojitos are all the rage this year. Cool, tall, and
refreshing, mojitos are made with rum, soda water, lime juice,and a
hint of fresh mint. My frozen version starts with frozen limeade,
and looks pretty when served in sugar-rimmed glasses. Try it at your
next summer gathering!
Frozen Mojito
Ingredients:
8 ounces froen limeade
6 ounces white rum
2 tablespoons granulated sugar
1/4 cup mint leaves, stems removed and densely packed
3-4 cups ice cubes
1 lime wedge, for garnish
Sparkling sugar, for garnish
Mint leaves, for garnish
In a blender, combine limeade, rum, sugar, and mint leaves. Pulse
the mixture several times to mix. Add ice cubes and blend until the
mixture is smooth and the mint is chopped.
Rub the rims of the glasses with the lime wedge and dip them in a
plate of sparkling sugar to coat. Pour in the mojito mixture and
garnish with mint leaves.
Recipe makes 6 to 8 cocktails.
