LUXURIOUS BREAKFASTS

How often do you treat yourself to a weekend
getaway? If your answer
is “not often enough”, then this column is for you.
You can get the pampered feeling of a luxury hotel stay
without the hassle of traveling by creating the atmosphere you enjoy
when out of town – a vase of fresh flowers by the bed to welcome
you home, dinner reservations at a nearby restaurant you’ve never
visited, and a sumptuous breakfast the next morning.
Starting your weekend morning with a great breakfast is the perfect
way to unwind from the work week.
A cup of fresh fruit or half of a grapefruit, a glass of
juice, eggs or waffles, and a pot of coffee or tea – it’s enough
to make you feel like you’ve left town for an overnight stay at a
luxurious hotel.
This week’s recipe for Orange Poppy Seed Belgian Waffles tastes
like posh hotel breakfast fare, but is surprisingly easy to make at
home. You can even whip
up the batter the night before, so cooking breakfast the next
morning is as simple as plugging in your electric waffle maker.
Then sit back, relax, and read the weekend newspaper.

Orange Poppy Seed Belgian Waffles
Ingredients:
1 ½ cups flour
1 ½ tablespoons sugar
2 teaspoons baking powder
½ teaspoon salt
2 eggs
¾ cup milk
¼ cup canola oil
2 tablespoons freshly squeezed orange juice
1 tablespoon orange zest
1 teaspoon poppy seeds
maple syrup
Spray a Belgian waffle maker with nonstick cooking spray and
preheat.
In a large bowl, stir together flour, sugar,
baking powder, and salt until well mixed.
In a small bowl, beat the eggs with a fork and stir in the
milk, canola oil, and orange juice.
Add the egg mixture to the flour mixture and stir until the
batter is smooth. Stir
in the orange zest and poppy seeds.
Ladle the batter onto the waffle maker according to the
manufacturer’s instructions.
Close the lid and cook until the waffle is golden brown on
both sides. Transfer it
to a platter and place in a warm oven while cooking the remaining
waffles. Serve the
waffles with warm maple syrup or fruit preserves.
Recipe makes approximately 7 6-inch waffles.
