French Toast with Crispy Corn
Flake Crust
Serves 4, 1 slice per person
1/2 cup fat-free milk
1/4 cup egg substitute
½ tsp. orange zest
4 slices bread
2 cups corn flakes, crushed
Whisk together milk, egg substitute, and orange zest in a shallow
bowl; reserve. Place crushed corn flakes in a separate shallow bowl;
reserve. Preheat a nonstick griddle on medium-high heat. (The pan is
ready when a few drops of water sprinkled on the surface quickly
evaporate.) Remove pan from heat and lightly spray with vegetable
oil spray. Dip slices of bread into milk mixture,turning to coat,
then into corn flake mixture, again turning to coat. Cook coated
bread slices for 3-4 minutes on each side, until lightly golden.
Serve warm with fresh fruit and syrup of
your choice.
Notes: Corn flakes add a terrific crunch to traditional French toast
for a great way to start the day. Serving idea: banana slices with
strawberry syrup. Zest is the very outer peel (rind) of a citrus
fruit.
