Garlic Shrimp with Sugar
Snap Peas

Garlic Shrimp with Sugar Snap Peas
Serves 4
2 Tbs. olive oil
4 cloves garlic, minced
1 lb. shrimp, peeled & deveined
1 1/2 cups sugar snap peas
1 tsp. lemon zest
1/2 tsp. dried dillweed
Heat a large skillet over medium heat. Add garlic and cook 5-6
seconds, do not let burn. Add shrimp and cook 3-4 minutes, stirring
occasionally, until shrimp is pink. Add sugar snap peas, lemon zest,
and
dillweed, and cook 30-60 seconds, until snap peas are tender-crisp.
(Season with salt and pepper to taste, if desired.) Serve over rice.
