Asian Chicken Salad (Serves
4)

4 cups napa cabbage, thinly sliced
1/2 cup julienne-cut cucumber
1/2 cup shredded carrots
2 green onions, thinly sliced
1 cup sliced cooked chicken
1/2 cup halved cherry tomatoes
2 Tbs. chopped peanuts
1/2 cup bottled Oriental-style salad dressing
Combine all ingredients, except peanuts and salad dressing, in a
large
bowl, tossing gently to mix. Spread salad evenly on an oval serving
platter. Chill before serving. When ready to serve, sprinkle salad
with
peanuts and serve salad dressing on the side.
